Raw, easy, super healthy and delicious. This salad can be whipped together and served in bulk for a communal picnic or portioned out to make around four individual serves.

INGREDIENTS |
2 cups carrot, julienned |
1 cup red cabbage, thinly sliced |
½ cup scallions, julienned |
2 cups zucchini, noodles or julienned |
1 cup bean sprouts |
1 yellow capsicum, thinly sliced |
1 red capsicum, thinly sliced |
½ cup coriander |
½ cup mint |
⅓ cup cashews |
½ cup creamy Creamy Asian Dressing (Recipe here ) |
Cashews, to garnish |
Coriander, to garnish |
METHOD |
Combine all ingredients together in a large mixing bowl and drizzle with the Creamy Asian Dressing. Toss to coat. |
Divide ingredients into 4 bowls and garnish with extra cashews and coriander. |
